Our family's recipes from Ratangarh, Churu, cooked fresh every day in the heart of Karnal. From Jodhpur's hot pyaaz kachori to the royal Marwari thali, served with manuhaar.
राजस्थान में मेहमान को भगवान का रूप माना जाता है, और हर घर में उसका स्वागत दो शब्दों से होता है: “पधारो सा”।
In Rajasthan, a guest is welcomed like God, with two simple words: “Padharo Sa”.
We named our restaurant after that welcome because it is the whole idea. You are not a customer here. You are a guest in a Rajasthani home. The thali is not simply served; it is offered with manuhaar, the loving insistence of a host who will not let you leave hungry.
The recipes are not borrowed from a cookbook. They come from our family's kitchen in Ratangarh, Churu, where dal-baati was made at home on family days and nobody was allowed to stop at one. Padharo Sa is run by Tejasv Upadhyay and Radhika Sharma of the Mohinisagar family.

You are greeted at the door with folded hands, two warm words and a chilled nimbu pani or jaljeera, on the house.
A brass thali arrives with baati, dal, gatte, ker-sangri, kadhi, bajra roti, mirchi kutta, garlic chutney and churma.
Hot rotis from the tawa, ghee poured over fresh baati, and a gentle “thodo aur lo sa” from your host whenever your plate looks empty.
You leave full, happy and with an invitation that every Rajasthani host means sincerely: please, come again.

Kachori fried fresh at our live counter, kadhi poured over hot dal kachori, and clay-cup chai, the way Jodhpur starts its day.

Lunch is a full Marwari thali: baati soaked in ghee, desert sabzis, bajra roti and a churma laddoo to finish.

Evenings are for kesar baati soaked in saffron syrup, warm moong dal halwa and a thick Jodhpuri lassi that you eat with a spoon.
थोड़ो और लो साHave a little more. You will hear it often at Padharo Sa.The words of manuhaar
Start with these. Each is a dish Rajasthan is proud of, cooked the way it is cooked at home.

In our Ratangarh home, dal-baati was a family day: baatis baked slowly until they cracked, broken by hand and soaked in hot ghee. This is that recipe.
2 plain and 2 bafla baatis, gatte ki sabzi, panchmel dal, mirchi kutta and 1 churma laddoo. With desi ghee, garlic chutney, mirchi tapore, papad, salad and jaggery.

All of Marwar on one brass plate, the way a family feeds its most honoured guests.
Gatte, ker-sangri, Marwari dal, Marwari kadhi, dahi fry and kabuli. 1 plain baati, 1 bafla baati, 1 bajra roti and 1 missi roti, all in ghee, 1 chapati (tandoori or tawa) and 1 churma laddoo. With garlic chutney, mirchi tapore, salad, papad, pickle and jaggery.

In Jodhpur, the day begins in a queue at the kachori shop. Ours are fried fresh at our live counter, flaky and full of spiced onion.
Jodhpur's most famous kachori: a flaky shell filled with onion, fennel and red chilli, slow-fried golden. With tamarind and mint chutneys.

Ker berries and sangri beans grow wild in the Thar, where little else will. Sun-dried, they fed desert families through the driest months.
Ker, a wild berry, and sangri, the beans of the khejri tree, grow in the Thar and are sun-dried. Cooked in mustard oil with pickling spices.

Roasted baati, ground coarse and bound with desi ghee and jaggery: the sweet every Marwari meal ends with.
Roasted baati ground coarse and bound with desi ghee, jaggery, cardamom and nuts. Marwar's sweet after dal-baati. Two pieces.

Jodhpur's famous lassi is so thick it is eaten with a spoon, crowned with fresh butter, saffron and cardamom.
Jodhpur's famous lassi: thick churned yoghurt topped with fresh butter, saffron and cardamom. So thick you may need a spoon.
In Rajasthan a thali is offered with manuhaar. Every one of ours carries the love of a whole household.
The traditional taste of Rajasthan. Choose your sabzis, dal, curd and drink, plain rice or kabuli, a basket of six breads and baatis, and a sweet, with all the sides.
